What do you get when Boozey Tuesdays lands on National Blueberry Popsicle Day (yes, it’s a real thing lol)??? Blueberry Champagne Popsicles, of course lol. I can’t believe I’m actually getting into these silly little “holidays”. Besides National Dog Day, I really only care about the foodie days because they’re just plain ol fun inspiration. It’s the reason I got to devour S’mores Dip and these Blueberry Champagne Popsicles all in one week, so I’ll take it!
- 2 cups champagne
- 3 cups blueberry juice
- 1 cup lightly smashed blueberries
- Mix all ingredients in a small pitcher. Fill each popsicle mold "almost" to the top. If the mold it too full, it will overflow as the ice starts to expand. Place the top over the molds and insert the popsicle sticks. Place in freezer on a small cookie tray to catch any overflow and allow to freeze for 5-6 hours. Enjoy!
