Nutella Icebox Cake Recipe

As most of you are aware from my Nutella Fruit & Pastry Cups dessert, I am so very ADDICTED to Nutella! We keep it on hand at all times, so when I came across this no-bake Nutella Icebox Cake recipe in the Food Network Magazine {great magazine, by the way!}, I ran out to the store to stock up on the remaining ingredients and whipped it up the next day. We ended up having a lot of company this week, which was perfect because I got to show off this dessert to my guests rather than eat it all myself lol. It got rave reviews from everyone that tried it!

Also, just a note to let you know that I doubled the recipe. I could barely spread the layers across the wafers with the amount made in the original recipe. They would have been very thin layers! I also used the Famous brand chocolate wafer cookies instead of chocolate grahams. SOOOOO good! My deviations are included in the recipe below.

Nutella Icebox Cake

Ingredients

  • 3 1/2 cups cold heavy cream
  • 3 cups mascarpone cheese
  • 2/3 cup confectioners' sugar
  • 2 teaspoon vanilla extract
  • 1 1/3 cup chocolate-hazelnut spread (such as Nutella)
  • 2 packages chocolate wafer cookies

Instructions

  1. Beat 2 cups heavy cream, 1 1/2 cup mascarpone, the confectioners' sugar and vanilla in a bowl with a mixer on low speed until combined. Increase the speed to medium and beat until stiff peaks form, 1 to 2 minutes.
  2. Combine the remaining 1 1/2 cup each heavy cream and mascarpone with the chocolate-hazelnut spread in a separate bowl. Beat with the mixer on low speed until combined, then increase the speed to medium and beat until stiff peaks form, 1 to 2 minutes.
  3. Line the bottom of a 10-inch springform pan with chocolate wafers in a single layer, breaking them into pieces to fit and fill any big gaps. Spread half of the vanilla whipped cream over the wafers, then top with another layer of wafers. Spread half of the chocolate-hazelnut whipped cream on top. Repeat with another layer of wafers, the remaining vanilla whipped cream, then more wafers and the remaining chocolate-hazelnut whipped cream. Cover the pan with plastic wrap and refrigerate at least 6 hours or overnight.
  4. Uncover the cake and run a thin knife around the edge to loosen. Remove the springform ring; smooth the sides of the cake using an offset spatula. Put the remaining wafers in a large resealable bag; crush into fine crumbs using the bottom of a skillet. Press the crumbs around the side of the cake.

Wishbone Chair Look For Less

Ever since I saw the wishbone chairs in the pic below {via DomainHome.com}, I have been in love with their traditional meets eclectic style. This chair comes in a variety of colors and can be dressed down in a traditional home, or stand out amongst super clean modern decor.

The original wishbone chair is designed by Hans J. Wegner for Carl Hansen & Søn and ranges from $599 – $899 depending on the color you choose. I was shocked when I happened upon a nearly identical Baxton Studio Wishbone Wood Y Chair at Bed, Bath & Beyond for only $175. The look for less is still a little pricey, but is $425 less than the original! This is a chair that I’d love to have in our dining room as soon as we decide to give that space a makeover.

Boozey Tuesdays – Sweet And Sour Cherry Sparkler

Summer Cocktail - Sweet And Sour Cherry Sparkler

Happy Boozey Tuesdays everyone! I’d planned on making a completely different summer cocktail this week until my husband came home with a batch of these beautiful cherries! I’m loving this sweet and sour cherry sparkler because you make your own DIY cherry infused simple syrup, which would also be perfect in a Coke or Sprite if you’re a cherry Coke or Shirley Temple fan! Vodka, a squeeze of lemon, cherry simple syrup, and soda water make up this perfectly delicious summer cocktail, garnished with a couple of basil leaves from my garden.

Sweet And Sour Cherry Sparkler

Yield: 2 Cocktails

Sweet And Sour Cherry Sparkler

Ingredients

  • 2 ounces vodka
  • 1 ounce freshly squeezed lemon juice
  • 1 ounce room temperature cherry simple syrup (Recipe below)
  • Club soda
  • Fresh basil for garnish

Instructions

  1. In a rocks glass filled with ice, add the vodka, lemon juice, and cherry simple syrup. Stir and fill glass with club soda.
  2. Garnish with fresh cherries and basil. Enjoy!

Cherry Simple Syrup

1 cup water 3/4 cup granulated sugar 1 cup ripe cherries, pitted

In a small saucepan heat the water, sugar, and cherries until the sugar has completely melted. Using a potato masher, smash the cherries. Strain through a fine mesh strainer and cool over an ice bath.

This week’s Fab Five is all about the “black and white” summer fashion trend! This trend totally appeals to my sense of style since I’m not too big on color, other than a pop here and there. I couldn’t wait for the neon and pastel trends to pass {have they passed?}, because those hues look great on everyone but me lol.

One of my favorite things to share is a recipe that is a rare combination of easy, interesting, and SO good. This is one of those recipes! This fancy version of eggs in a basket using won ton wrappers in a muffin tin is a fun take on the traditional recipe. They pop right out of the tin for individual serving and the presentation is so cool.

Bake for less time if you prefer a runny egg, or a little more for an egg closer to hard boiled. Half of the eggs in a basket are a combination of prosciutto, roasted red pepper and Parmesan, while the other half are tarragon and brie cheese. Both versions are AMAZING! This is the meal I make for Sunday morning brunch whenever I have company.

Prep Time: 20 minutes

Cook Time: 25 minutes

Yield: 12 Eggs In A Basket

Fancy Eggs In A Basket

Ingredients

  • 2 tablespoons butter, melted
  • 24 wonton squares
  • 6 slices shaved prosciutto, chopped
  • 12 large eggs
  • 6 tablespoons grated Parmesan
  • 1 roasted red pepper, cut into thin strips
  • 6 slices Brie cheese
  • 12 fresh tarragon leaves
  • Salt and pepper

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Brush the muffin cups with butter and line each with 1 wonton square. Brush the squares with more butter and place the second wonton on top of the first at an angle so that all of the points show. Divide the prosciutto among 6 of the muffin cups. Break 1 egg into each muffin cup. Top the 6 with the prosciutto with the Parmesan and, using 2 slices of red pepper each, form an "X" on top of each egg.
  3. Top the other 6 eggs with the brie and form an "X" on the top of those with the tarragon leaves. Sprinkle all with a little salt and pepper and place in the bottom half of the oven for 15 to 20 minutes, or until the egg white is firm but yolk still liquid. Remove from the oven and let sit 5 minutes before carefully removing the baskets from the tin. Arrange on a decorative platter and serve immediately.

Outdoor string lights are quickly taking the place of last year’s garden stools as the hottest trend in home decor. What’s interesting about both, is that they are heavily used indoors and outdoors, garden stools as side tables and outdoor string lights to add a little sparkle and glam to any space.

We have a small deck attached to a screened in porch and hope to add a triangle tarp sun canopy and some outdoor lights above this space. I personally love the casual zig-zag style of hanging these lights! If you don’t have a deck overhang, find a near by tree and string the lights between the branches and your home, or use posts and string lights to outline your porch space. Buy a little extra and wrap it around the trunk of a tree for mega sparkle!

I picked up a fairly affordable set for Father’s Day at Restoration Hardware {$35 each}. A lot of places are having HUGE “after 4th of July” sales on all outdoor furniture and accessories, so now is a great time to buy!
