My latest creative endeavor is canning and it’s officially berry season! So far I’ve made strawberry and blueberry jam and I can’t wait to try blackberry jam. I’m even visiting local berry farms to pick my own fruit for canning. The blackberry farm keeps getting picked over at 7am on a Saturday, so I’m actually thinking about starting a little blackberry patch of my own in my backyard.
I hope to have a full canning tutorial for you all soon, but for today, I thought I’d share a super easy ready to serve chia seed mixed berry jam. This recipe couldn’t be more simple since it does not involve the full water bath canning process.
This mixed berry jam featuring strawberries and blueberries is very easy. Jams usually call for a lot of sugar, but you can avoid the sweetener unless the berries are bland. Use any fruit you have on hand. For this jam, I mixed a large handful of blueberries and just tossed it with strawberries.
Ingredients
- 1 pound strawberries
- 1/2 cup blueberries
- 1 tablespoon Chia seeds
- 1 tablespoon lemon juice
- maple syrup or honey (optional)
Instructions
- In a small sauce pan bring everything to a simmer, except the Chia seeds. Allow the berries to get very soft and mushy and use a potato masher to break them down. Once they are soft, let them simmer for 15 to 20 minutes, until most of the liquid has evaporated.
- Remove from heat and add the Chia seeds. Mix and let cool completely. Test for sweetness.
- Store in a glass jar in the fridge overnight. The next day it's ready to eat. Enjoy!
