You guys!!! I have finally accomplished my long time mission of creating an at home gourmet mac and cheese! I may have cheated a little with an amazing shredded cheese blend, but it was so worth it! Years ago, I joined a friend for some fine dining in Atlanta, and it’s the first time I’d ever ordered macaroni and cheese from a high-end restaurant. I’ve been trying to recreate the lobster macaroni and cheese recipe ever since, and I think I finally got it right!

I’m sure I’m not the only one trying to come up with the perfect at home macaroni and cheese recipe, so I am beyond excited about Roth’s Ultimate Mac & Cheese specialty blend of shredded cheeses that combines Grand Cru {a Roth original cheese}, Havarti, and sharp cheddar. I’ve seen so many cheese blends – Mexican, Italian, cheddar – but never a blend specifically for Macaroni and Cheese. Brilliant, and it’s about time!

Lobster Macaroni and Cheese

Ingredients

  • 1 pound penne pasta
  • 1/3 cup butter
  • 1/3 cup flour
  • 3 cups whole milk
  • 3 6 ounce packages Roth Ultimate Mac&Cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground pepper
  • 1 teaspoon salt
  • 1 pound cooked lobster, chopped

Instructions

  1. Preheat oven to 350 degrees. In a large pot of lightly salted boiling water, cook penne until al dente, about 11 minutes. Drain, rinse in cold water, and set aside.
  2. Meanwhile, in a medium saucepan, melt butter over medium heat. Slowly whisk in flour until the mixture forms a paste and simmer, stirring constantly, for 3-5 minutes. Slowly whisk in milk and continue to heat until warm. Turn off heat and slowly whisk in shredded cheese, garlic powder, paprika, pepper, and salt. Continue to whisk until well blended and smooth.
  3. In a large mixing bowl, stir together penne, lobster, and cheese mixture. Pour into one large casserole dish, or individual souffle dishes. Top evenly with bread crumbs.
  4. Bake at 350 degrees on middle rack for 25 minutes, or until heated through and bread crumbs are lightly browned. If bread crumbs are not browned, broil on high for 2-3 minutes.
