I got inspired by all of the #TacoTuesday hashtags going around Instagram so I thought I’d join in the fun! I’ve been wanting to try a fresh take on traditional tacos by smothering mine in avocado and a cilantro lime cream sauce. It turned out amazing and I literally had to stop myself from devouring another. John was even begging for “mo, mo, mo” {more} lol. We’ll definitely be making these tacos again and again! They were perfectly presented in my new taco rack by Crate & Barrel.
Ingredients
- Tacos:
- 2 large chicken breasts, cut into thin strips (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 avocados, chopped
- 1 small onion, chopped
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 lime, juiced
- 2 tablespoons vegetable oil
- 8 corn tortillas
- 1 (15 ounce) can black beans, drained and rinsed
- 1 cup cooked white rice
- 2 tablespoons chopped fresh cilantro
- Cilantro Cream Sauce:
- 1/2 cup sour cream
- 1/2 cup fresh cilantro
- 1/2 teaspoon minced garlic
- 2 tablespoons lime juice
Instructions
- Season chicken in garlic powder, salt, and pepper. Cook in a saute pan over medium heat until cooked through.
- Mix avocados, onion, 1/4 cup cilantro, and garlic together in a bowl. Drizzle lime juice over avacado mixture; toss to coat.
- Heat vegetable oil in a skillet over medium heat. Arrange tortillas, 2 at a time, in hot oil; cook until warm, about 1 minute per side. Remove tortillas using tongs and repeat with remaining tortillas.
- For the Cilantro Cream Sauce: In a food processor, pulse the sour cream, cilantro, garlic, and lime juice until smooth. Chill in the refrigerator until ready to serve.
- Spoon 2 tablespoons black beans, 2 tablespoons cooked rice, and chicken strips onto each tortilla; top with avacado mixture. Garnish tacos using remaining 2 tablespoons cilantro and cilantro lime cream sauce.
