Happy Boozey Tuesdays everyone! I hope you’re enjoying my summer cocktail series. If you have an idea for a summer cocktail that doesn’t include fruit as one of the main ingredients, I hope you’ll share in the comments. Or maybe they all should?
I know I already picked the Cuban Mojito as my fav drink for summer, but this peach billini is a close runner up. Since it only has 3 ingredients, I’d pick up a bottle of mid-to-upper grade prosecco (sparkling wine), since the quality of the wine and the freshness of your peaches will really define the flavors of this cocktail. This is another cocktail that’s perfect for a summer brunch!
- 2 ripe peaches, seeded and diced
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon sugar
- 1 bottle chilled prosecco sparkling wine
- Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve. Place 2 tablespoons of the peach puree into each Champagne glass and fill with cold prosecco. Serve immediately.
