Happy Boozey Tuesdays everyone! I hope you’re enjoying my summer cocktail series. If you have an idea for a summer cocktail that doesn’t include fruit as one of the main ingredients, I hope you’ll share in the comments. Or maybe they all should?

I know I already picked the Cuban Mojito as my fav drink for summer, but this peach billini is a close runner up. Since it only has 3 ingredients, I’d pick up a bottle of mid-to-upper grade prosecco (sparkling wine), since the quality of the wine and the freshness of your peaches will really define the flavors of this cocktail. This is another cocktail that’s perfect for a summer brunch!

Boozey Tuesdays – Fresh Peach Billinis


  • 2 ripe peaches, seeded and diced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon sugar
  • 1 bottle chilled prosecco sparkling wine


  1. Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve. Place 2 tablespoons of the peach puree into each Champagne glass and fill with cold prosecco. Serve immediately.

  • i LOVE bellini and even though I make it with fresh peach puree i dont know why i had never thought about actually adding peach slices, love this idea! it’s so much prettier too!

      i’d never had a bellini before. this was my first and it was really good. the original recipe didn’t call for peaches, but i tossed them in because i thought it made for a fun pic. thanks for noticing :)

    Do you have a favorite prosecco you like? Can you use champagne? Do you peel the peaches or does it matter? Thanks.

      i have thought about your comment so many times since you asked. i didn’t remember what i used, so i went to my local grocery store to find it and would you beleive they don’t carry it any more. i’ve been a few times since to try and get an answer for you, but i just can’t find that bottle again. if i see it again, i will definitely let you know. i thought i’d respond for now so you don’t think i missed your comment :) champagne would probably work really well! also, i didn’t peel the peaches. thanks, susan!
