Happy Boozey Tuesdays! I hope you are enjoying this summer cocktail series! Can you all think of any interesting summer cocktails that don’t involve fruit? I hope you’ll comment below with your ideas. Besides a margarita, I very much associate seasonal fruit with summer cocktails so I keep reaching for what we have on hand from the market. This week, with a fridge full of raspberries, I thought I’d do a fun take on the traditional raspberry blimey cocktail.
A blimey cocktail usually consists of liquor, lime juice, and simple syrup. This sounded too sweet and strong to me, so I mixed it up a bit. Instead of lime juice and simple syrup, I opted for lemon/lime soda with a splash of lime and swapped out vodka for rum. I hope you all enjoy my take on the pretty and tastey raspberry blimey!
Ingredients
- 1 Ounce Rum
- 2 Dashes Black Currant Liqueur
- 4 Ounces Lemon Lime Soda
- 1 Lime
- 4-5 Raspberries
Instructions
- Fill cocktail glass with ice and pour in rum and black currant liqueur. Fill glass with lemon lime soda, a squeeze of lime, and garnish with raspberries.
