Raspberry Pancakes Recipe

My sister, one of the best cooks and photographers I know, is helping me out with a couple of posts while I adjust to my new life with baby. She has 2 kiddos under the age of 3, so I have no idea where she’s finding the time to help out lol. One of her latest creations was this Raspberry Poppy Seed Pancakes recipe, and I’m so happy she decided to share!

Lauren started with a basic pancakes recipe {below} and added in poppy seeds and raspberries. After you pour the batter in the pan, top with a few crushed raspberries and then flip.


3/4 cup buttermilk
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
1 teaspoon poppy seeds
1 cup raspberries (crushed, a few reserved for garnish)
cooking spray


Combine flour, sugar, baking powder, baking soda, poppy seeds, and salt in a large mixing bowl. Whisk egg and butter into buttermilk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, spoon a couple of crushed raspberries onto the mix, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
