Bananas Foster Frappe

I’m now 3 for 3 with the recipes I’ve tried from Sugar In The Raw’s website – three amazing recipes for three attempts {see sesame peanut sauce recipe and chocolate lava soufflés recipe}! This Bananas Foster Frappe is so good that I would take a sip, put it down, and pick it right back up lol. It was totally addictive and the perfect summer cocktail.

2 bananas, peeled
1 tablespoon lemon juice
1/4 cup Sugar In The Raw®
1/4 teaspoon ground cinnamon
1/2 teaspoon banana extract {optional}
1 teaspoon rum extract {or 1/4 cup dark rum}
3/4 cup whole milk
3 cups vanilla ice cream, slightly thawed
4 strawberries, rinsed, hulled, and thinly sliced for garnish {optional}

Preheat the oven to 350 degrees. Spray a medium-size baking dish with no-stick cooking spray and set aside. Slice bananas in half lengthwise, then cut crosswise into 1/2-inch pieces. Put the banana pieces in a small mixing bowl, add the lemon juice, Sugar In The Raw®, and the cinnamon. Toss gently to coat evenly.

Place the banana mixture in the prepared baking dish and bake until the bananas are soft, about 10 minutes.

Remove from the oven and cool completely {it will smell amazing and the wait will drive you a little crazy}.

Spoon the banana mixture with the accumulated syrup into an electric blender. Add the banana extract {optional – I opted not to use the extract}, the rum extract or the dark rum, the milk and the ice cream. Blend until smooth. Pour into chilled wine glasses and garnish with the strawberries or bananas. Serve immediately.

Note: Use banana extract if you like a more intense banana flavor. I opted not to use the extract.
