Chili Rubbed Pork Tenderloin with Apricot Ginger Glaze

Apricot Ginger Barbeque Chili Pork Tenderloin Recipe

This chili rubbed pork tenderloin with apricot ginger glaze is one of my favorite dinners for spring/summer. It’s pretty easy too since it involves no chopping. Y’all know I rate a recipe’s level of difficulty based on chopping because I HATE to chop lol. This is one of those easy, yet tastes gourmet recipes. So that I could focus on the main course, I paired this with easy sides – 90 second microwave Jasmine rice and some sauteed zucchini. The Jasmine rice was a little beachy, just like the main course.

This recipe is actually a mix of two recipes. There is a cranberry pork loin roast that I make around the holidays, so I took that but modified some of the ingredients to make it seasonal for spring/summer. By the way, I think I’m finally getting a little better about my food styling and photography, what do you think?

Serves: 6

Ingredients:

Spice Rub:
1 tablespoon chili powder
1 tablespoon garlic powder
1/2 tablespoon sugar
1 teaspoon salt
1/2 teaspoon ground black pepper

Glaze:
1 1/2 cups apricot preserves
1/2 cup barbecue sauce
1 teaspoon grated ginger
1/2 teaspoon garlic powder
1/2 teaspoon hot sauce
1 tablespoon cilantro
1 lime, juiced

Directions:

Preheat oven to 425 degrees F. Place chili powder, garlic powder, sugar, salt and pepper in a small bowl and mix well.

Combine the apricot preserves, barbecue sauce, grated ginger, garlic powder, hot sauce, cilantro, and lime in a saucepan; bring to a boil.

Line a large baking pan with foil. Place pork loin in pan, fat side up. Rub evenly with spice mixture. Use a pastry brush and a small spoon to completely coat the pork with sauce, reserving some sauce to coat over cooked loin (and optional side of rice).

Cook until the pork is no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Liquid Crystal is a blue shimmer nail polish packed full of purple, green, red, and yellow glitter. Liquid Crystal is comparable to Prism, yet the duochrome in this polish goes from a blue-green to purple, rather than blue to purple.

Full Spectrum is a silvery pink shimmer nail polish with red pink, blue and green glitter. This was the most sheer polish in the collection.

My Thoughts On China Glaze’s Prismatic Collection

I’m not a big fan of confetti colored glitter nail polishes or frosty shimmers, so I’m not really too wild about any of these colors. For glitter polishes, I usually prefer sequin, effects top coats, or monochromatic glitters (ex. a pewter glitter in a black polish). With that said, this collection is fun and super sparkly, so if you love glitters, especially a duochrome glitter, then you will LOVE this collection. The formula was easy to apply with no streaks and I loved the wide brushes. I was surprised that most went on fully opaque in only two coats.

Summer Smooth Drugstore Beauty Products Review

It’s time to get smooth for summer and show a little skin. Although this is my “best of” list for staying smooth this season, I didn’t realize until I gathered my favorite products together for this post that they all happen to be from the drugstore and use mostly natural ingredients. Quality, affordability, and natural ingredients are three reasons to LOVE these products.

  • St. Ives Naturally Clear Green Tea Scrub – this is hands down the best scrub ever! I tried a travel sized sample of it and immediately ran out to every Target in town to find the full-size bottle. I like my exfoliant to be loaded with scrubbers and I like the scrubbers to be small, like a fine grade sand paper lol. This scrub fits both of my preferences {better than their apricot scrub} AND reduces redness naturally with antioxidant-rich green tea.
  • Aveeno Daily Moisturizing Lotion – this lotion is between the consistency of a lotion and a gel so it lasts longer than most lotions that just absorb into your skin quickly. I put this on my hands every night before I go to bed and it keeps my cuticles in great shape for Manicure Mondays.
  • EOS {Evolution of Smooth} Ultra Moisturizing Shave Cream – EOS sent me a bottle of their shaving cream in Vanilla Bliss a while back and I picked up another bottle as soon as I ran out. There are two reason to love this product. First and foremost, I love the plastic bottle vs. the cans of shaving cream that leave a rust ring on my tub. Secondly, the product itself is an aloe and shea butter lotion vs. a foam, and I find that I get a much smoother shave with this moisturizing cream.
  • EOS {Evolution of Smooth} Lip Balm – EOS also sent me their lip balm in Summer Fruit and it’s such a fun product. The sphere packaging is super easy to find in your purse, I LOVE the smell, and I especially love the way my lips feel when I’m wearing it. I find myself over applying it lol.
  • Gillette Mach3 Turbo Razor – yes, I stole my man’s razor and then finally got one of my own. Men’s razors are above and beyond the quality of a woman’s razor. Why is that? I was always careful with my razor and would still get nicks. With this razor, I couldn’t nick myself if I tried lol. I get a much closer shave in half the time.
  • Pumice Stone – I love my pumice stone for super smooth feet. It’s a must have for a home pedicure. I use it almost every time I shower. I am scared of those metal foot zester looking products because I’m so afraid of the whole water and metal {rust hazard?} combination to scrub my feet lol. It just doesn’t seem right.
