Easter Cadbury Mini-Egg Blondies

Thanks so much to my Twitter bud @BunnieXOXO for inspiring this Easter themed snack. She found a recipe for Cadbury Mini-Egg Blondies and I couldn’t wait to try it (check out her version using brownies)! I’d never had blondies before, so I reached out to a friend that has made them a time or two for her recipe found at SimplyRecipes.com.
The best I can describe a blondie is that it shares a lot of the same ingredients as cookie dough, but it’s the consistency and form of a brownie. Since I am a chocolate addict, I don’t think I’d ever be able to make blondies on their own, so the addition of the Cadbury Mini-Eggs was perfect for me {maybe with chocolate chips after Easter}. This recipe doesn’t have any cinnamon in it, but my taste-testing friend thought these blondies were similar to Snickerdoodles.
Serving: 9 Blondies
Ingredients:
1/2 cup of butter, melted
1 cup of tightly packed dark brown sugar
1 egg, lightly beaten
1 teaspoon of vanilla
1/2 teaspoon baking powder
1/8 teaspoon of baking soda
Pinch of salt
1 cup of all-purpose flour
1 cup Cadbury Mini-Eggs
1/4 cup Cadbury Mini Eggs, crushed
Directions:
Preheat the oven to 350°F. Lightly butter and flour an 8X8 pan. Whisk together the melted butter and sugar in a bowl.
Add the egg and vanilla extract and whisk. Add the flour, baking soda, baking powder, and salt, mix it all together. Mix in 1 cup of the Cadbury-Mini Eggs.
Pour into the pan and spread evenly. Bake for 20-25 minutes or until a toothpick comes out clean. Allow to cool. Sprinkle evenly with crushed Cadbury Mini-Eggs, cut into squares and serve.

Oh. Em. Gee. I’m dying over here. Cadbury mini eggs are my favorite candy. This is being made tomorrow. Maybe even for breakfast!

no way! that sounds amazing! i added nutella cupcakes to last weeks fab five, cuz im addicted to nutella, so i may have to try your combo sometime.
